3/4 small apples -peeled, cored & sliced
5 teaspoons mixed spice/cinnamon
4 teaspoons baking soda
250g plain flour
Grease a baking tin. I used a loaf tin and it was the perfect size for the above quantities. Increase for a bigger tin.
Mix flour, baking soda and 4 teaspoons of mixed spice/cinnamon (the other teaspoonful will come later!) in a bowl.
In a separate bowl whisk the eggs and sugar.
Gradually fold in the flour to the egg and sugar mix.
Now fold in the apples and then pour into your baking tin.
Dust the final teaspoon of mixed spice/cinnamon over the mixture.
Bake for 50-60 minutes at 200 degrees.
